Ingredients

  • 3 Tbsp. flour
  • 3 Tbsp. margarine
  • 3/4 c. sugar
  • 3 Tbsp. lemon juice
  • 2 tsp. lemon peel
  • 2 egg yolks
  • 1 c. milk
  • 2 egg whites
  • 1/4 c. sugar

Method

  • Combine flour, margarine, sugar (3/4 cup), lemon juice and peel.
  • Add beaten egg yolks, then add milk, a little at a time. In another bowl, beat egg whites until stiff.
  • Add sugar (1/4 cup).
  • Fold egg whites into first mixture.
  • Pour into 6 lightly greased custard cups.
  • Place cups in pan of hot water.
  • Bake at 350° for 35 minutes.
  • When baked, it has cakelike portion on top and creamy pudding under it.
