Ingredients

  • 1 34 cups cracker crumbs
  • 1 teaspoon baking powder
  • 34 cup flour
  • 12 cup white sugar
  • 34 cup butter
  • 12 cup flaked coconut
  • 2 tablespoons milk
  • lemon pie filling mix

Method

  • Mix first 7 ingredients together.
  • Press half the mixture onto the bottom of an 8"x8" pan.
  • Bake at 350 for 8 minutes.
  • Prepare lemon filling.
  • Pour over the mixture in the pan.
  • Sprinkle with the rest of the crumbs.
  • Return to oven and bake until top starts to brown a little, about 30 minutes.
  • Watch closely so the squares do not burn.
