Ingredients

  • 1-1/2 cups flour
  • 1/2 cup sugar
  • 2 Tbsp. poppy seed
  • 1 tsp. CALUMET Baking Powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 2 eggs
  • 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
  • 1/4 cup butter, melted
  • 1 Tbsp. lemon zest
  • 2 Tbsp. lemon juice
  • 1/2 tsp. vanilla

Method

  • Heat oven to 350F.
  • Mix first 6 ingredients in large bowl.
  • Beat eggs in small bowl.
  • Add sour cream, butter, lemon zest, lemon juice and vanilla; mix well.
  • Add to flour mixture; stir just until moistened.
  • Spoon batter into 12 muffin cups sprayed with cooking spray.
  • Bake 18 to 20 min.
  • or until toothpick inserted in centers comes out clean.
  • Cool 5 min.
  • before removing from pan.
