Ingredients

  • 5 cups fresh cauliflower, chopped
  • 3 cups fresh broccoli, chopped
  • 1 lb bulk sweet Italian sausage, crumbled
  • 1 medium red onion, chopped
  • 1 (15 ounce) can garbanzo beans, rinsed, drained
  • 2 cups roasted garlic Ragu Pasta Sauce
  • 12 cup coconut milk
  • 3 tablespoons cilantro, minced
  • 1 teaspoon salt
  • 12 cup roasted red pepper, minced
  • 2 -3 teaspoons ground curry powder
  • 1 cup goat cheese, crumbles
  • 12 cup breadcrumbs

Method

  • Preheat oven to 325.
  • Spray a 13 inch x 9 inch baking dish with non stick cooking spray.
  • In a medium skillet, on medium high, cook sausage , breaking it up into crumbles until browned, 2-3 minutes; add onions, cooking for 1 minute; drain; stir in cauliflower and broccoli .
  • Mix well.
  • Pour mixture into prepared baking dish.
  • In a medium bowl, mix together Roasted Garlic Ragu Tomato Sauce, coconut milk, Garbanzo beans,.
  • roasted red pepper,cilantro, salt, and curry powder.
  • Pour blended mixture on the vegetables; top with goat cheese and bread crumbs.
  • Bake for 40 minutes.
