- 5 cups fresh cauliflower, chopped
- 3 cups fresh broccoli, chopped
- 1 lb bulk sweet Italian sausage, crumbled
- 1 medium red onion, chopped
- 1 (15 ounce) can garbanzo beans, rinsed, drained
- 2 cups roasted garlic Ragu Pasta Sauce
- 12 cup coconut milk
- 3 tablespoons cilantro, minced
- 1 teaspoon salt
- 12 cup roasted red pepper, minced
- 2 -3 teaspoons ground curry powder
- 1 cup goat cheese, crumbles
- 12 cup breadcrumbs
Method
- Preheat oven to 325.
- Spray a 13 inch x 9 inch baking dish with non stick cooking spray.
- In a medium skillet, on medium high, cook sausage , breaking it up into crumbles until browned, 2-3 minutes; add onions, cooking for 1 minute; drain; stir in cauliflower and broccoli .
- Mix well.
- Pour mixture into prepared baking dish.
- In a medium bowl, mix together Roasted Garlic Ragu Tomato Sauce, coconut milk, Garbanzo beans,.
- roasted red pepper,cilantro, salt, and curry powder.
- Pour blended mixture on the vegetables; top with goat cheese and bread crumbs.
- Bake for 40 minutes.
