Ingredients

  • 2 Tbsp. cornstarch
  • 3/4 c. sugar
  • 1 c. boiling water
  • 1/4 c. lemon juice
  • 1 Tbsp. butter
  • 2 egg yolks
  • salt (pinch)
  • 2 grated lemon rinds
  • 2 Tbsp. sugar

Method

  • Combine cornstarch and 3/4 cup sugar.
  • Add wate slowly, stirring constantly.
  • Cook over hot water in double boiler, stirring constantly, until thick and smooth.
  • Add slightly beaten egg yolks, butter, lemon rind and juice and pinch of salt.
  • Cook 2 minutes.
  • Pour into baked pie shell.
  • Cover with meringue made with egg whites and 2 tablespoons sugar.
  • Bake in slow oven (325°) for 20 minutes.
