Ingredients
- 2 Tbsp. cornstarch
- 3/4 c. sugar
- 1 c. boiling water
- 1/4 c. lemon juice
- 1 Tbsp. butter
- 2 egg yolks
- salt (pinch)
- 2 grated lemon rinds
- 2 Tbsp. sugar
Method
- Combine cornstarch and 3/4 cup sugar.
- Add wate slowly, stirring constantly.
- Cook over hot water in double boiler, stirring constantly, until thick and smooth.
- Add slightly beaten egg yolks, butter, lemon rind and juice and pinch of salt.
- Cook 2 minutes.
- Pour into baked pie shell.
- Cover with meringue made with egg whites and 2 tablespoons sugar.
- Bake in slow oven (325°) for 20 minutes.
