Ingredients
- 1 c. wild rice
- 2 c. diced chicken, cooked
- 1 1/2 c. halved green grapes
- 1 c. sliced water chestnuts, drained
- 3/4 c. regular or light mayonnaise
- 1 c. cashew halves
Method
- Cook rice according to package directions. Drain well.
- Cool to room temperature.
- Spoon into a large bowl. Add chicken, grapes, water chestnuts and mayonnaise.
- Toss gently with fork. Cover and chill.
- Just before serving, line dish with lettuce and add cashews.
