Ingredients

  • 1 tablespoon Dijon mustard
  • 14 cup all-purpose flour
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • 1 pinch salt
  • 1 teaspoon olive oil
  • 1 teaspoon water
  • 2 tablespoons white wine vinegar
  • 2 tablespoons fresh lemon juice
  • 1 cup sliced mushrooms
  • 1 garlic clove
  • 4 boneless skinless chicken breasts

Method

  • Rub dijon on chicken.
  • In a bowl mix flour, rosemary, thyme & salt.
  • Place chicken in flour mixture.
  • Transfer chicken to skillet with oil and water and brown for 2-3 minutes per side.
  • Add vinegar and lemon juice and cook for additional few seconds, remove from the pan.
  • In same skillet, saute mushrooms and garlic, then add to chicken.
  • Sprinkle with parsley to garnish is desired.
