- 1 tablespoon Dijon mustard
- 14 cup all-purpose flour
- 1 teaspoon rosemary
- 1 teaspoon thyme
- 1 pinch salt
- 1 teaspoon olive oil
- 1 teaspoon water
- 2 tablespoons white wine vinegar
- 2 tablespoons fresh lemon juice
- 1 cup sliced mushrooms
- 1 garlic clove
- 4 boneless skinless chicken breasts
Method
- Rub dijon on chicken.
- In a bowl mix flour, rosemary, thyme & salt.
- Place chicken in flour mixture.
- Transfer chicken to skillet with oil and water and brown for 2-3 minutes per side.
- Add vinegar and lemon juice and cook for additional few seconds, remove from the pan.
- In same skillet, saute mushrooms and garlic, then add to chicken.
- Sprinkle with parsley to garnish is desired.
