Ingredients

  • 1 pie crust
  • 1/4 c. cornstarch
  • 2 Tbsp. flour
  • 1 c. sugar
  • 2 c. boiling water
  • 2 Tbsp. margarine
  • 1 Tbsp. grated lemon peel
  • 1/4 tsp. salt
  • 3 egg yolks
  • 6 Tbsp. lemon juice

Method

  • In top of double boiler, mix cornstarch, flour, sugar and salt.
  • Gradually stir in boiling water.
  • In small bowl, beat egg yolks into cornstarch mixture.
  • Place top of double boiler over boiling water and cook about 5 minutes until filling is thick, stirring occasionally.
  • Remove pot from boiling water.
  • Mix in margarine, lemon peel and lemon juice.
  • Cover in cooker and cool slightly.
  • Pour in crust.
  • Top with your favorite meringue.
