Ingredients
- 1 pie crust
- 1/4 c. cornstarch
- 2 Tbsp. flour
- 1 c. sugar
- 2 c. boiling water
- 2 Tbsp. margarine
- 1 Tbsp. grated lemon peel
- 1/4 tsp. salt
- 3 egg yolks
- 6 Tbsp. lemon juice
Method
- In top of double boiler, mix cornstarch, flour, sugar and salt.
- Gradually stir in boiling water.
- In small bowl, beat egg yolks into cornstarch mixture.
- Place top of double boiler over boiling water and cook about 5 minutes until filling is thick, stirring occasionally.
- Remove pot from boiling water.
- Mix in margarine, lemon peel and lemon juice.
- Cover in cooker and cool slightly.
- Pour in crust.
- Top with your favorite meringue.
