Ingredients

  • 1 (14 oz.) can Carnation evaporated milk
  • 1 small pkg. lemon jello
  • 1 3/4 c. hot water
  • 1/4 c. lemon juice
  • grated rind of 1 lemon
  • 1 c. sugar
  • 2 1/2 c. vanilla wafer crumbs
  • pinch of salt
  • 1 small can crushed pineapple, well drained

Method

  • Put milk in refrigerator until icy cold.
  • Dissolve jello in hot water until partially set.
  • Whip it.
  • Add lemon juice, rind, sugar and pineapple.
  • Whip chilled milk until stiff.
  • Fold in jello mixture.
  • Line pan with 1/2 crumbs.
  • Pour mixture on this. Sprinkle crumbs on top.
