Ingredients

  • 1 lb. butter or oleo
  • 2 1/3 c. sugar
  • 6 eggs
  • 1/4 lb. candied pineapple
  • 1/4 lb. white raisins
  • 3 oz. lemon extract
  • 4 c. sifted flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 lb. candied cherries (green and red)
  • 4 c. pecans

Method

  • Cream butter and sugar.
  • Add eggs (one at a time), beating well after each.
  • Add lemon extract and blend.
  • Sift dry ingredients together and add to creamed mixture.
  • Add fruit and nuts.
  • Bake in loaf pan at 300° for 1 1/2 hours or in a tube pan 2 1/2 to 3 hours.
  • I prefer to use a tube pan.
  • Needs to be made a week or so ahead.
