- 1 lb. butter or oleo
- 2 1/3 c. sugar
- 6 eggs
- 1/4 lb. candied pineapple
- 1/4 lb. white raisins
- 3 oz. lemon extract
- 4 c. sifted flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 lb. candied cherries (green and red)
- 4 c. pecans
Method
- Cream butter and sugar.
- Add eggs (one at a time), beating well after each.
- Add lemon extract and blend.
- Sift dry ingredients together and add to creamed mixture.
- Add fruit and nuts.
- Bake in loaf pan at 300° for 1 1/2 hours or in a tube pan 2 1/2 to 3 hours.
- I prefer to use a tube pan.
- Needs to be made a week or so ahead.
