Ingredients

  • 1-1/2 cups Flour
  • 3/4 cup Butter
  • 3 tablespoon Sugar
  • 2.9 ounces Lemon pie filling (pudding) small package
  • 1 envelope Knox Gelatin
  • 1 cup Sugar
  • 2 tablespoons Lemon juice
  • 3 Egg Yokes
  • 2-1/4 cups Water
  • 1 teaspoon Lemon Rind
  • 1 tablespoon Butter
  • 3 Egg Whites
  • 1 envelope Dream Whip

Method

  • Crust: Combine flour, butter, sugar and press into 9x13 pan. Bake crust at 350°F 20-25 min. Cool.
  • Filling: Combine Pie filling, Knox gelatin, sugar, lemon juice, egg yoke (save whites), water in saucepan. Cook to full boil. Add lemon rind and butter. Chill filling.
  • Prepare Dream Whip as directed on box and chill.
  • Beat egg whites until stiff peaks form. Fold into Filling mixture.
  • Save approx. 1 cup of Dream Whip, fold in remainder to filling.
  • Pour lemon filling onto crust and chill.
  • Frost with thin layer of remaining Dream Whip.
  • Keep chilled.
