Ingredients

  • 2 c. sifted flour
  • 1 1/2 c. sugar
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1/2 c. cooking oil
  • 7 unbeaten egg yolks
  • 3/4 c. pineapple juice
  • 2 tsp. grated lemon rind
  • 2 tsp. vanilla
  • 1/2 c. well-drained crushed pineapple
  • 1 c. egg whites (7 or 8)
  • 1/2 tsp. cream of tartar

Method

  • Beat until whites form very stiff peaks.
  • Mix about 1 cup of the egg white mixture into the flour mixture to lighten.
  • Pour egg yolk mixture gradually over whipped egg whites, gently folding with rubber spatula just until blended.
  • Do not stir.
