Ingredients
- 3 tablespoons peanut oil, divided
- 3 tablespoons diced ginger, divided
- 1/3 cup diced leek (white part only)
- 2 garlic cloves, minced
- 2 cups cooked jasmine rice, cold
- 2 teaspoons light soy sauce
- 1 chopped tomato
- 2 green onions, sliced on diagonal
- 2 teaspoons sesame oil
- 2 eggs
Method
- Fry eggs.
- Heat 2 tablespoons oil in wok; add 2 tablespoons ginger and fry until golden brown, about 5 minutes. Drain and set aside.
- Heat remaining 1 tablespoon oil in wok. Add leek and saute 5 minutes. Add garlic and remaining 1 tablespoon ginger; cook 2 minutes. Add rice; stir-fry until slightly colored, about 4 minutes. Add soy sauce and cook 2 minutes.
- Place rice on platter; top with green onion, sesame oil, fried ginger, and eggs.
