Ingredients

  • 6 Tbsp. seasoned rice vinegar or rice vinegar and 1 Tbsp. sugar
  • 2 tsp. sugar
  • 2 tsp. oriental sesame oil
  • about 1 Tbsp. soy sauce
  • 2 1/2 c. shredded cooked chicken
  • 8 c. (about 1 1/2 lb.) finely shredded rinsed and crisped iceberg lettuce
  • 1 c. cherry tomatoes, rinsed and cut in half
  • 1/2 c. thinly sliced green onions
  • 1/2 c. fresh cilantro (coriander) leaves
  • 6 to 8 large iceberg lettuce leaves, rinsed and crisped

Method

  • In a large bowl, combine vinegar, sugar, oil, 1 tablespoon soy and chicken.
  • Add shredded lettuce, tomatoes, onions and cilantro; mix.
  • Mound salad equally onto leaves on 4 to 6 plates.
  • Add soy to taste.
  • Makes 4 to 6 servings.
