- 12 cup Italian dressing
- 1 lb boneless skinless chicken breast, cut into strips
- 1 cup chicken broth
- 1 cup broccoli floret
- 1 red pepper, cut into strips
- 1 cup carrot, thinly sliced
- 2 cups Minute brown rice, uncooked
- 1 tablespoon lemon pepper seasoning
- 14 cup lemon juice
- 2 tablespoons parmesan cheese, grated
Method
- Heat dressing in large skillet on medium-high heat.
- Add chicken; cook and stir 1 minute.
- Add broth, broccoli, red pepper and carrots.
- Bring to boil.
- Stir in rice and lemon juice.
- Return to boil.
- Reduce heat to low; cover.
- Simmer 10 minutes.
- Remove from heat.
- Let stand 5 minutes.
- Stir in lemon pepper seasoning; sprinkle with parmesan just before serving.
