Ingredients

  • 12 cup Italian dressing
  • 1 lb boneless skinless chicken breast, cut into strips
  • 1 cup chicken broth
  • 1 cup broccoli floret
  • 1 red pepper, cut into strips
  • 1 cup carrot, thinly sliced
  • 2 cups Minute brown rice, uncooked
  • 1 tablespoon lemon pepper seasoning
  • 14 cup lemon juice
  • 2 tablespoons parmesan cheese, grated

Method

  • Heat dressing in large skillet on medium-high heat.
  • Add chicken; cook and stir 1 minute.
  • Add broth, broccoli, red pepper and carrots.
  • Bring to boil.
  • Stir in rice and lemon juice.
  • Return to boil.
  • Reduce heat to low; cover.
  • Simmer 10 minutes.
  • Remove from heat.
  • Let stand 5 minutes.
  • Stir in lemon pepper seasoning; sprinkle with parmesan just before serving.
