Ingredients

  • 1 c. Bisquick
  • 1/4 c. milk
  • 2 eggs
  • 1/4 c. chopped onion
  • 1 (10 oz.) pkg. frozen spinach, thawed and drained
  • 1/4 c. Parmesan cheese
  • 4 oz. Monterey Jack cheese, cut into 1/2-inch cubes
  • 1 (12 oz.) carton creamed cottage cheese
  • 1/2 tsp. salt
  • 2 tsp. garlic powder
  • 2 eggs

Method

  • Heat oven to 375°.
  • Grease a 9 x 13-inch baking dish.
  • Mix baking mix, milk, eggs and onion.
  • Beat vigorously.
  • Spread in dish.
  • Mix remaining ingredients and spoon evenly over batter. Bake 30 minutes or until set.
  • Let stand 5 minutes before cutting. Makes 6 to 8 servings.
