- 1 c. Bisquick
- 1/4 c. milk
- 2 eggs
- 1/4 c. chopped onion
- 1 (10 oz.) pkg. frozen spinach, thawed and drained
- 1/4 c. Parmesan cheese
- 4 oz. Monterey Jack cheese, cut into 1/2-inch cubes
- 1 (12 oz.) carton creamed cottage cheese
- 1/2 tsp. salt
- 2 tsp. garlic powder
- 2 eggs
Method
- Heat oven to 375°.
- Grease a 9 x 13-inch baking dish.
- Mix baking mix, milk, eggs and onion.
- Beat vigorously.
- Spread in dish.
- Mix remaining ingredients and spoon evenly over batter. Bake 30 minutes or until set.
- Let stand 5 minutes before cutting. Makes 6 to 8 servings.
