Ingredients

  • 1 small head lettuce, chopped
  • 1/2 c. celery, chopped
  • 1/2 c. purple onion, sliced
  • 1 can LeSueur peas, drained
  • 1/2 c. mayonnaise
  • 1/2 c. cheese, shredded
  • 1/4 lb. bacon, cooked and crumbled or 1/4 c. bacon bits
  • 2 Tbsp. sugar
  • 3 boiled eggs, chopped

Method

  • In a 7 x 11-inch glass dish, layer lettuce, celery, onion, peas and eggs.
  • Combine sugar and mayonnaise.
  • Spread evenly over dish to the edges.
  • Sprinkle with cheese and bacon or bacon bits. Cover and chill overnight.
  • Makes about 8 servings.
