Ingredients

  • 1 tbsp vegetable oil
  • 2 lbs diced lamb
  • 2 None onions, chopped
  • 1 (14 oz) jar rogan josh cooking sauce
  • 1/2 cup chicken stock
  • 2 lbs potatoes, peeled and quartered
  • 2 cups baby spinach leaves
  • None None poppadums, to serve

Method

  • Heat oil in a large, heavy-based saucepan on high. Cook lamb in batches for 2-3 mins each, until browned. Set aside.
  • Add onions and saute for 4-5 mins, or until tender and lightly golden. Stir in cooking sauce and stock.
  • Bring to a boil. Reduce heat to low. Add lamb and simmer, covered, for 30 mins, or until meat is tender. Add potatoes and cook, covered, for 25 mins, or until tender.
  • Stir in spinach leaves and cook for 3 mins, or until wilted. Serve with poppadums.
