Ingredients
- 1 None medium egg
- 1/3 cup all-purpose flour
- 1/2 tsp sugar
- 2/3 cup milk
- 1 tbsp butter
- 8 oz strawberries, hulled and sliced
- 1/2 tsp ground cinnamon
- 2 tbsp honey
- 1 1/4 cups heavy cream, whipped
- None None Powdered sugar, to dust
Method
- Place the egg, flour and sugar in a large bowl and whisk together. Gradually add the milk, whisking continuously, to form a smooth batter. Set aside for 20 minutes to allow the batter to thicken slightly.
- Heat an 8 inch frying pan over medium heat and lightly butter the base.
- Starting from center of pan, spoon a thin stream of batter to form a spider's web effect. Cook for 1-2 mins. Carefully turn; cook for another min. Repeat with remaining batter, adding more butter to the pan as needed, to produce 6 lacy pancakes.
- In a separate bowl, mix together the strawberries, cinnamon and honey.
- Fill each pancake with spoonfuls of whipped cream and strawberries. Serve immediately, dusted with powdered sugar. If preparing pancakes in advance, store layered with parchment paper; heat and add fillings just before serving.
