Ingredients

  • 1 None medium egg
  • 1/3 cup all-purpose flour
  • 1/2 tsp sugar
  • 2/3 cup milk
  • 1 tbsp butter
  • 8 oz strawberries, hulled and sliced
  • 1/2 tsp ground cinnamon
  • 2 tbsp honey
  • 1 1/4 cups heavy cream, whipped
  • None None Powdered sugar, to dust

Method

  • Place the egg, flour and sugar in a large bowl and whisk together. Gradually add the milk, whisking continuously, to form a smooth batter. Set aside for 20 minutes to allow the batter to thicken slightly.
  • Heat an 8 inch frying pan over medium heat and lightly butter the base.
  • Starting from center of pan, spoon a thin stream of batter to form a spider's web effect. Cook for 1-2 mins. Carefully turn; cook for another min. Repeat with remaining batter, adding more butter to the pan as needed, to produce 6 lacy pancakes.
  • In a separate bowl, mix together the strawberries, cinnamon and honey.
  • Fill each pancake with spoonfuls of whipped cream and strawberries. Serve immediately, dusted with powdered sugar. If preparing pancakes in advance, store layered with parchment paper; heat and add fillings just before serving.
