Ingredients

  • 1 cup chorizo, sliced into 1/2-inch thick pieces
  • 1/2 cup red onion, diced
  • 2 tablespoons jalapeno, finely diced
  • 1/2 cup red bell pepper
  • 8 eggs
  • 1/2 cup milk
  • 1/2 teaspoon sea salt
  • 1 teaspoon pepper
  • 2 (9-inch) flour tortillas
  • 1/4 cup shredded jack cheese
  • 1/4 cup shredded Cheddar
  • 1/2 cup scallions, diced

Method

  • Pre heat oven to 375 degrees F.
  • In a skillet over high heat, cook chorizo.
  • When the sausages are almost cooked through, add the onion, jalapeno, and pepper and saute until vegetables are soft.
  • Remove chorizo mixture to a bowl and let it cool.
  • In medium bowl, mix eggs, milk, and salt and pepper.
  • Add the chorizo mixture to the egg mixture.
  • Spray nonstick cooking spray on a pie pan, place 1 tortilla and pour the egg/chorizo mixture into the pan.
  • Bake for 15 minutes.
  • Remove from oven, top with another tortilla and the shredded cheeses and bake for another 5 minutes.
  • Remove from oven and garnish with scallions.
  • Serve immediately.
