Ingredients

  • 1 ox kidney or 8 mutton kidneys
  • salt and pepper
  • flour
  • 1 lb. ground beef
  • 1 c. chopped onion
  • 3/4 c. green pepper
  • 1 clove garlic, minced
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. chili powder
  • 5 c. sliced zucchini or summer squash
  • 2 large tomatoes, chopped
  • 1 1/4 c. (3 ears) corn
  • 2 Tbsp. pimientos, chopped
  • 1/4 c. fresh parsley, chopped

Method

  • Saute beef, onion, green pepper and garlic in a skillet until browned.
  • Remove corn from ears and add with remaining ingredients.
  • Cover and simmer for 10 to 15 minutes or until vegetables are tender.
  • Serves 6.
