- 1 ox kidney or 8 mutton kidneys
- salt and pepper
- flour
- 1 lb. ground beef
- 1 c. chopped onion
- 3/4 c. green pepper
- 1 clove garlic, minced
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. chili powder
- 5 c. sliced zucchini or summer squash
- 2 large tomatoes, chopped
- 1 1/4 c. (3 ears) corn
- 2 Tbsp. pimientos, chopped
- 1/4 c. fresh parsley, chopped
Method
- Saute beef, onion, green pepper and garlic in a skillet until browned.
- Remove corn from ears and add with remaining ingredients.
- Cover and simmer for 10 to 15 minutes or until vegetables are tender.
- Serves 6.
