Ingredients

  • 4 bonless chicken breasts
  • 1/4 cup dark brown sugar
  • 1/4 cup dijon mustard
  • 1/4 cup bourbon
  • 2 green onions, sliced thin
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon butter
  • 1 tablespoon olive oil

Method

  • Pound chicken (in a zip lock bag) until its 1/4" thick, place in baking dish.
  • Combine brown sugar and next 5 ingredients. Brush mustard mixture on both sides of chicken. Cover & marinate for 1-2 hours in fridge.
  • Remove chicken - save marinade.
  • Combine butter & olive oil in large skillet over medium-high heat and saute until chicken is done.
  • Remove drippings from pan and place chicken on a serving dish. Add marinade to skillet and bring to a boil, pour over chicken.
  • Serve with rice and green salad.
