Ingredients

  • 4 eggs, separated
  • 1 (14 oz.) c. sweetened condensed milk
  • 3/4 c. fresh lime juice
  • zest of lime
  • 9-inch pie shell, baked and cooled
  • 3/4 c. sugar
  • 1 tsp. vanilla

Method

  • Preheat oven to 425°.
  • Beat egg yolks until creamy.
  • Fold in condensed milk, beat lightly.
  • Stir in lime juice and zest.
  • When thickened, pour into pie shell.
  • Beat egg whites until very stiff and peaks form.
  • Slowly add sugar.
  • Add vanilla when all the sugar is added.
  • Spread over pie.
  • Brown under broiler until meringue is golden.
  • Chill before serving.
