Ingredients
- 4 eggs, separated
- 1 (14 oz.) c. sweetened condensed milk
- 3/4 c. fresh lime juice
- zest of lime
- 9-inch pie shell, baked and cooled
- 3/4 c. sugar
- 1 tsp. vanilla
Method
- Preheat oven to 425°.
- Beat egg yolks until creamy.
- Fold in condensed milk, beat lightly.
- Stir in lime juice and zest.
- When thickened, pour into pie shell.
- Beat egg whites until very stiff and peaks form.
- Slowly add sugar.
- Add vanilla when all the sugar is added.
- Spread over pie.
- Brown under broiler until meringue is golden.
- Chill before serving.
