Ingredients

  • 1 (16 oz.) can cream-style corn
  • 1 c. yellow cornmeal
  • 3/4 c. milk
  • 1/3 c. vegetable oil
  • 2 eggs, slightly beaten
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 (4 oz.) chopped green chilies
  • 1 c. shredded cheese

Method

  • In a mixing bowl, stir all ingredients, except the green chilies and cheese. Pour 1/2 the batter into a greased 2-quart baking dish. Spread chilies and cheese over batter.
  • Pour remaining batter over all. Bake at 375° for about 45 minutes or until set. Serve with spoon. Serves 6 to 8.
