- 1 (16 oz.) can cream-style corn
- 1 c. yellow cornmeal
- 3/4 c. milk
- 1/3 c. vegetable oil
- 2 eggs, slightly beaten
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 (4 oz.) chopped green chilies
- 1 c. shredded cheese
Method
- In a mixing bowl, stir all ingredients, except the green chilies and cheese. Pour 1/2 the batter into a greased 2-quart baking dish. Spread chilies and cheese over batter.
- Pour remaining batter over all. Bake at 375° for about 45 minutes or until set. Serve with spoon. Serves 6 to 8.
