Ingredients

  • 4 boneless skinless chicken breasts
  • 1/3 cup white wine
  • 1/3 cup green onion chopped
  • 1/3 cup parsley chopped
  • 2/3 cup dry bread crumbs
  • 3/4 cup butter
  • 4 Tbsp. Parmesan cheese, grated
  • 1 1/2 tsp. basil
  • 1 tsp. garlic salt

Method

  • Preheat oven to 375F.
  • In a 2 quart saucepan, melt butter. In a small pie pan, combine bread crumbs, parmesan cheese, basil, and garlic salt.
  • Mix well.
  • Dip chicken breast in melted butter then roll into bread crumbs to coat.
  • Place chicken in a lightly greased baking dish.
  • Bake for 50-60 minutes or until done.
  • While chicken is baking, add wine, onion, and parsley to remaining melted butter.
  • When chicken is golden brown, pour butter sauce over and around chicken.
  • Return to oven, bake for 5 minutes more or until sauce is hot.
  • Serve with wild rice.
