Ingredients

  • 2 c. parboiled rice
  • 1 (8 oz.) can tomato paste
  • 1 Jamaican pepper to taste
  • 1 tsp. salt to taste
  • 1 tin corned beef or fresh stew beef
  • 1 small onion, chopped
  • 1/4 c. vegetable oil
  • 2 bouillon cubes

Method

  • Make a stew with onion, corned beef, pepper, salt and oil. Add the parboiled rice into the pot of stew with all the ingredients.
  • Allow to simmer for 30 minutes.
  • Add water according to demand until the rice is well cooked, approximately 45 minutes. Serves 5 to 6 people.
