Ingredients

  • 3 c. sugar
  • 4 eggs
  • 1 Tbsp. flour
  • 1 (12 oz.) can evaporated milk
  • 1 stick margarine
  • 1/2 tsp. salt
  • 2 tsp. vanilla
  • 1 c. shredded coconut
  • 1 c. pecans

Method

  • Mix sugar and margarine; add eggs.
  • Beat together.
  • Add flour, salt and vanilla.
  • Mix well.
  • Add 1 can evaporated milk and mix all together.
  • Sprinkle 1/2 coconut in bottom of 9-inch unbaked pie crust.
  • Add 1/2 cup pecans; pour 1/2 pie mixture over coconut and pecans.
  • Bake at 400° until pie is consistency of custard and a golden brown.
  • Repeat with second pie crust and rest of ingredients.
  • Makes 2 pies.
