Ingredients
- 3 c. sugar
- 4 eggs
- 1 Tbsp. flour
- 1 (12 oz.) can evaporated milk
- 1 stick margarine
- 1/2 tsp. salt
- 2 tsp. vanilla
- 1 c. shredded coconut
- 1 c. pecans
Method
- Mix sugar and margarine; add eggs.
- Beat together.
- Add flour, salt and vanilla.
- Mix well.
- Add 1 can evaporated milk and mix all together.
- Sprinkle 1/2 coconut in bottom of 9-inch unbaked pie crust.
- Add 1/2 cup pecans; pour 1/2 pie mixture over coconut and pecans.
- Bake at 400° until pie is consistency of custard and a golden brown.
- Repeat with second pie crust and rest of ingredients.
- Makes 2 pies.
