Ingredients

  • 1 Tbsp. cornstarch
  • 1 (14-1/2 oz.) can Del Monte Italian-Style stewed tomatoes
  • 1/3 c. Italian seasoned bread crumbs
  • 1/3 c. grated parmesan cheese
  • 4 chicken breasts, boneless and skinless
  • 3 Tbsp. oil
  • 4 slices mozzarella cheese

Method

  • In a small saucepan, dissolve cornstarch in tomatoes. Cover, cook over medium low heat, stirring constantly until thickened; keep warm. Combine bread crumbs and parmesan cheese. Dip chicken into crumbs, coating well. Fry chicken in oil 3 to 4 minutes on each side. Place one slice cheese on each piece of chicken. Cover and cook until melted. Place on serving plate; top with tomatoes; sprinkle with additional parmesan cheese, if desired.
