Ingredients

  • 5 eggs
  • 1 c. Crisco
  • 2 c. sugar
  • 2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 c. buttermilk
  • 1 tsp. vanilla
  • 2 c. coconut
  • 2 c. chopped nuts
  • 8 oz. cream cheese
  • 1 stick butter
  • 1 box powdered sugar
  • 1 tsp. vanilla

Method

  • Separate eggs and beat egg whites until stiff.
  • Cream Crisco and sugar; add egg yolks and beat well.
  • Combine flour, soda and salt in separate bowl.
  • Alternate, adding flour mixture and buttermilk to sugar and eggs; mix well.
  • Add 1 teaspoon vanilla, 2 cups coconut and 1 cup nuts.
  • Add eggs whites and mix well.
  • Bake in three 8-inch pans at 350° for 35 to 40 minutes.
