Ingredients

  • 1 12 lbs fresh green beans, trimmed
  • 12 lb fresh mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh basil or 1 teaspoon dried basil
  • 1 teaspoon lemon peel, grated
  • 14 teaspoon sugar
  • 14 teaspoon salt
  • 18 teaspoon pepper

Method

  • Cover beans with water and bring to a boil.
  • Cook uncovered for 8 to 10 minutes or until crisp-tender.
  • Be careful not to overcook.
  • Drain.
  • In a large non-stick skillet, saute mushrooms in oil until crisp-tender; stir in the drained beans.
  • Sprinkle with basil, lemon peel, sugar, salt and pepper.
  • Cook and stir until combined.
