Ingredients
- 2 Tbsp. Olive oil
- 1 Tbsp. minced garlic
- 1 small onion
- 1 pkg. fresh whole leaf spinach
- 1 small can diced tomatoes, drained
- 1 (4oz.) jar sliced mushrooms, drained
Method
- Saute garlic and onion in olive oil until onion is clear. Mix in spinach. Cook on medium heat until tender.
- Spinach will cook down a considerable amount.
- Add drained tomato and drained mushrooms.
- Simmer until heated through.
- Serves 2 - 4.
