Ingredients
- 3 c. frozen cut broccoli or Italian style mixed vegetables
- 2 Tbsp. mayonnaise
- 4 boneless, skinless chicken breasts, halved
- 1/3 c. dry Italian seasoning bread crumbs
- 3 Tbsp. grated Parmesan cheese
- 1/8 tsp. paprika
Method
- In a large strainer, rinse vegetables to thaw.
- Place in 1 3/4-quart casserole dish.
- Rinse chicken and pat dry.
- Brush chicken on all sides with mayonnaise.
- Combine bread crumbs and cheese.
- Roll chicken in crumb mixture.
- Arrange chicken pieces on top of vegetables.
- Sprinkle chicken with paprika and remaining bread crumbs.
- Cover and cook at 325° for 45 minutes to an hour or until chicken is tender.
- Microwave on High for 10 to 12 minutes.
