Ingredients

  • 3 c. frozen cut broccoli or Italian style mixed vegetables
  • 2 Tbsp. mayonnaise
  • 4 boneless, skinless chicken breasts, halved
  • 1/3 c. dry Italian seasoning bread crumbs
  • 3 Tbsp. grated Parmesan cheese
  • 1/8 tsp. paprika

Method

  • In a large strainer, rinse vegetables to thaw.
  • Place in 1 3/4-quart casserole dish.
  • Rinse chicken and pat dry.
  • Brush chicken on all sides with mayonnaise.
  • Combine bread crumbs and cheese.
  • Roll chicken in crumb mixture.
  • Arrange chicken pieces on top of vegetables.
  • Sprinkle chicken with paprika and remaining bread crumbs.
  • Cover and cook at 325° for 45 minutes to an hour or until chicken is tender.
  • Microwave on High for 10 to 12 minutes.
