Ingredients
- 4 or 5 lb sirloin tip roast
- 2 cups canned beef broth
- 3 Tbsp tomato paste
- 1 large can chopped tomatoes
- 2 garlic cloves-pressed
- 1 Tbsp dried basil
- 1 Tbsp dried oregano
- 2 bay leaves
- 1 lb mushrooms-optional
- 1 Tbsp butter
- 2 Tbsp all purpose flour
Method
- Preheat oven to 350.
- Place roast in dutch oven or large pot. Pour in beef broth.
- Add the tomato paste and stir,
- add the tomatoes,
- blend in garlic, basil oregano, bay leaves. Cover and cook in oven for 1 1/2 hours.
- Turn over meat and add the carrots, onions and mushrooms.
- Cover and continue to cook for 1 to 1 1/2 hours.
