Ingredients

  • 4 or 5 lb sirloin tip roast
  • 2 cups canned beef broth
  • 3 Tbsp tomato paste
  • 1 large can chopped tomatoes
  • 2 garlic cloves-pressed
  • 1 Tbsp dried basil
  • 1 Tbsp dried oregano
  • 2 bay leaves
  • 1 lb mushrooms-optional
  • 1 Tbsp butter
  • 2 Tbsp all purpose flour

Method

  • Preheat oven to 350.
  • Place roast in dutch oven or large pot. Pour in beef broth.
  • Add the tomato paste and stir,
  • add the tomatoes,
  • blend in garlic, basil oregano, bay leaves. Cover and cook in oven for 1 1/2 hours.
  • Turn over meat and add the carrots, onions and mushrooms.
  • Cover and continue to cook for 1 to 1 1/2 hours.
