Ingredients

  • 1-1/2 cup flour
  • 1/2 cup granulated sugar
  • 2 tbsp. baking powder
  • 1/2 tsp. salt
  • 1 container (15 oz.) ricotta cheese
  • 4 eggs
  • 1 tbsp. vanilla
  • Cooking oil for frying
  • Sifted powdered sugar
  • granulated sugar
  • cinnamon with sugar

Method

  • Mix together in a bowl the flour, granulated sugar, baking powder and salt.
  • Set aside.
  • In a large bowl beat ricotta cheese with a mixer on medium till smooth.
  • Add the eggs and vanilla and beat till mixed.
  • Then add the dry ingredients.
  • Beat with mixer on low speed until just combined.
  • Let batter sit for 30 minutes.
  • Preheat oil to 365 degrees F in a deep fryer.
  • Place well rounded teaspoonfuls no more than four or five at a time into the hot oil.
  • Cook for 2 1/2 to 3 minutes or till golden brown, turning doughnuts once.
  • Using a slotted spoon remove doughnuts and place on paper towels to drain.
  • Cool completely and then shake doughnuts in a bag with the sugar mixture of your choice.
