- 1-1/2 cup flour
- 1/2 cup granulated sugar
- 2 tbsp. baking powder
- 1/2 tsp. salt
- 1 container (15 oz.) ricotta cheese
- 4 eggs
- 1 tbsp. vanilla
- Cooking oil for frying
- Sifted powdered sugar
- granulated sugar
- cinnamon with sugar
Method
- Mix together in a bowl the flour, granulated sugar, baking powder and salt.
- Set aside.
- In a large bowl beat ricotta cheese with a mixer on medium till smooth.
- Add the eggs and vanilla and beat till mixed.
- Then add the dry ingredients.
- Beat with mixer on low speed until just combined.
- Let batter sit for 30 minutes.
- Preheat oil to 365 degrees F in a deep fryer.
- Place well rounded teaspoonfuls no more than four or five at a time into the hot oil.
- Cook for 2 1/2 to 3 minutes or till golden brown, turning doughnuts once.
- Using a slotted spoon remove doughnuts and place on paper towels to drain.
- Cool completely and then shake doughnuts in a bag with the sugar mixture of your choice.
