Ingredients
- 1 stick margarine
- 1/2 c. oil
- 2 c. sugar
- 5 eggs, separated
- 2 c. self-rising flour
- 1 tsp. soda
- 1 c. buttermilk
- 1 tsp. vanilla
- 1 1/2 c. coconut
- 1 c. pecans
Method
- Beat margarine, oil and sugar until creamy.
- Add egg yolks, one at a time; mix well.
- Sift flour and soda together.
- Alternately add buttermilk.
- Add vanilla, coconut and chopped nuts.
- Fold in beaten egg whites.
- Grease and flour three 9-inch pans.
- Bake at 350° for 30 minutes.
- When cool, frost with cream cheese frosting. Freezes well.
