Ingredients

  • 1 Tbsp. olive oil
  • 1 cup chopped red onion
  • 1 jalapeno pepper, seeded, finely chopped
  • 1 can (15 oz.) black beans, rinsed
  • 1/4 cup cilantro
  • 1 tsp. lime zest
  • 2 Tbsp. fresh lime juice
  • 1/2 tsp. hot pepper sauce
  • 72 RITZ Crackers
  • 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
  • 1/2 cup finely chopped red peppers
  • 1/2 cup finely chopped avocados

Method

  • HEAT oil in small skillet on medium heat.
  • Add onions and jalapenos; cook and stir 5 min.
  • or until crisp-tender.
  • Cool slightly.
  • TRANSFER onion mixture to blender.
  • Add next 5 ingredients; blend until smooth.
  • TOP crackers with bean mixture, sour cream, red peppers and avocados.
  • Serve immediately.
