- 4 cups coarsely chopped peeled tomato (about 2 1/4 pounds)
- 1/3 cup thinly sliced green onions
- 1/4 cup coarsely chopped fresh cilantro
- 1 1/2 tablespoons fresh lemon juice
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 3/4 teaspoon ground sumac or 1/2 teaspoon grated lemon rind
- 1/4 teaspoon ground cumin
- 1/8 teaspoon salt
- 1/8 teaspoon crushed red pepper
- Dash of sugar
Method
- Combine all ingredients in a bowl; toss well.
