Ingredients

  • 3 eggs
  • 1 1/2 cups sugar
  • 3/4 cup mayonnaise
  • 8 oz. can crushed pineapple (undrained)
  • 2 cup flour
  • 2 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. salt
  • 3 cup coarsely shredded carrots
  • 3/4 cup chopped walnuts

Method

  • Mix together eggs, sugar, mayonnaise, and pineapple. Combine flour, baking soda, cinnamon, ginger and salt.
  • Add to pineapple mixture.
  • Mix well.
  • Fold in carrots and walnuts.
  • Pour into greased and floured 9 x 13 inch pan.
  • Bake at 350 degrees for 35 to 40 minutes.
  • Cool and frost with cream cheese icing.
