Ingredients

  • 1 (14 oz.) can Eagle Brand milk
  • 1 1/2 c. water
  • 1/2 c. biscuit baking mix
  • 3 eggs
  • 1/4 c. margarine or butter, softened
  • 1 1/2 tsp. vanilla
  • 1 c. flaked coconut

Method

  • Preheat oven to 350°.
  • In blender container, combine all ingredients, except coconut.
  • Blend on low 3 minutes.
  • Pour mixture into greased 10-inch pie plate.
  • Let stand 5 minutes. Sprinkle coconut over top.
  • Carefully place in oven; bake 35 to 40 minutes or until knife inserted near edge comes out clean.
  • Cool slightly.
  • Serve warm or chilled.
  • Refrigerate leftovers.
