Ingredients
- 1 (14 oz.) can Eagle Brand milk
- 1 1/2 c. water
- 1/2 c. biscuit baking mix
- 3 eggs
- 1/4 c. margarine or butter, softened
- 1 1/2 tsp. vanilla
- 1 c. flaked coconut
Method
- Preheat oven to 350°.
- In blender container, combine all ingredients, except coconut.
- Blend on low 3 minutes.
- Pour mixture into greased 10-inch pie plate.
- Let stand 5 minutes. Sprinkle coconut over top.
- Carefully place in oven; bake 35 to 40 minutes or until knife inserted near edge comes out clean.
- Cool slightly.
- Serve warm or chilled.
- Refrigerate leftovers.
