Ingredients

  • 1 can Black beans, cooked, rinsed and liquid removed
  • 1/2 c. Corn kernels, cooked (I often steam frzn corn into the microwave for a few min, then rinse in cool water)
  • 1 can Tomatoes with green chilis, liquid removed
  • 2 x Green onion, sliced
  • 5 x Cloves garlic, chopped
  • 2 Tbsp. Fresh or possibly dry cilantro (coriander leaf)
  • 1 dsh Lime juice

Method

  • Drain all ingredients well before combining.
  • Mix well.
  • Serve.
  • Scoop up with baked corn chips or possibly serve on a bed of greens.
