Ingredients
- 1 (10 oz.) pkg. frozen, chopped broccoli, spinach or asparagus
- 1 c. dairy sour cream
- 1 c. creamed cottage cheese (low-fat if desired)
- 1/2 c. Bisquick
- 1/4 c. margarine, melted
- 2 eggs
- 1/4 c. grated Parmesan cheese
- 1 tomato, peeled and sliced
Method
- Cook and drain broccoli.
- Grease a 9-inch pie plate.
- Spread cooked broccoli in pie plate.
- Beat together sour cream, cottage cheese, Bisquick, margarine and eggs.
- Pour in pie plate.
- Top with thin tomatoes.
- Sprinkle with Parmesan cheese.
- Bake at 350° for 30 to 40 minutes.
- When knife inserted in center comes out clean, it is done.
- Serves 6 to 8.
