Ingredients

  • 1 (10 oz.) pkg. frozen, chopped broccoli, spinach or asparagus
  • 1 c. dairy sour cream
  • 1 c. creamed cottage cheese (low-fat if desired)
  • 1/2 c. Bisquick
  • 1/4 c. margarine, melted
  • 2 eggs
  • 1/4 c. grated Parmesan cheese
  • 1 tomato, peeled and sliced

Method

  • Cook and drain broccoli.
  • Grease a 9-inch pie plate.
  • Spread cooked broccoli in pie plate.
  • Beat together sour cream, cottage cheese, Bisquick, margarine and eggs.
  • Pour in pie plate.
  • Top with thin tomatoes.
  • Sprinkle with Parmesan cheese.
  • Bake at 350° for 30 to 40 minutes.
  • When knife inserted in center comes out clean, it is done.
  • Serves 6 to 8.
