Ingredients

  • 1/2 c. plus 2 Tbsp. melted butter or margarine
  • 1 small clove garlic, crushed
  • 3/4 c. dry bread crumbs
  • 1/2 c. grated Parmesan cheese
  • 1 1/2 Tbsp. minced parsley
  • 1 tsp. salt
  • pepper to taste
  • 3 whole chicken breasts, split, boned and skinned
  • juice of 1 lemon
  • paprika

Method

  • Combine butter and garlic; set aside.
  • Combine bread crumbs, cheese, parsley, salt and pepper; stir well.
  • Dip each chicken breast in butter mixture and coat with bread crumb mixture.
  • Roll tightly, starting at narrow end, and secure with a toothpick. Arrange rolls in a shallow baking pan.
  • Drizzle with remaining butter and lemon juice.
  • Sprinkle with paprika.
  • Bake at 350° for 45 to 55 minutes.
  • Yields 6 servings.
