Ingredients
- 2 cups dates, pitted
- 1/4 cup tamarind (imly) deseeded
- 1 cup gud (packed brown sugar)
- 1 tsp. garam masala
- 1 tsp. cayenne pepper
- 1 tsp. cumin powder
- Pinch of asafetida
- Salt to taste
- 4 cups water
Method
- Combine all ingredients.
- Bring to a boil.
- Reduce heat and simmer for another 15-20 minutes.
- Cool and strain the mixture through a sieve.
- You may also puree the cutney in a blender then strain it.
