Ingredients
- 1 box vanilla wafers, crushed (by hand or in food processor)
- 2 c. confectioners sugar
- 2 sq. unsweetened chocolate, melted
- 1/2 c. butter
- 3 eggs, separated
- 1 tsp. vanilla
- 1/8 tsp. salt
- 1/2 gal. French vanilla ice cream, left at room temperature until softened
Method
- Put 1/2 vanilla wafer crumbs on bottom of 9 x 13-inch pan.
- Mix sugar with butter and chocolate.
- Add egg yolks, one at a time, beating well.
- Add vanilla and salt.
- Beat egg whites until stiff. Fold into chocolate mixture.
- Pour it over crumbs.
- Spread ice cream over chocolate mixture.
- Top with remaining vanilla wafer crumbs.
- Cover and put in freezer overnight before serving.
