Ingredients

  • 1 box vanilla wafers, crushed (by hand or in food processor)
  • 2 c. confectioners sugar
  • 2 sq. unsweetened chocolate, melted
  • 1/2 c. butter
  • 3 eggs, separated
  • 1 tsp. vanilla
  • 1/8 tsp. salt
  • 1/2 gal. French vanilla ice cream, left at room temperature until softened

Method

  • Put 1/2 vanilla wafer crumbs on bottom of 9 x 13-inch pan.
  • Mix sugar with butter and chocolate.
  • Add egg yolks, one at a time, beating well.
  • Add vanilla and salt.
  • Beat egg whites until stiff. Fold into chocolate mixture.
  • Pour it over crumbs.
  • Spread ice cream over chocolate mixture.
  • Top with remaining vanilla wafer crumbs.
  • Cover and put in freezer overnight before serving.
