Ingredients
- 2 teaspoons salt
- 2 tablespoons baking powder
- 1/2 cup flour
- 1 1/2 cups cornmeal
- 4 green onions, finely chopped (white and green parts)
- 1 cup low-fat buttermilk
- 1 egg, lightly beaten
- 4 ounces canola oil
Method
- Heat oil in a small, deep pan, ensuring that the oil is over 1 inch deep. Heat oil to 375 degrees F. If using a deep fryer, add oil as needed.
- While oil is heating, combine dry ingredients. Mix in chopped green onions. Gradually blend in buttermilk and egg until thoroughly blended.
- Using a small cookie scoop or tablespoon, drop batter into the oil, making sure not to crowd the pan. If using a deep fryer, shake the basket once all the batter has been dropped in to keep it from sticking.
- Cook until golden brown. If the oil doesn't completely cover the batter, make sure to turn the batter over to brown on all sides.
- Remove from oil and allow to drip back into the oil before placing on cooling rack or paper towel.
