Ingredients

  • 2 teaspoons salt
  • 2 tablespoons baking powder
  • 1/2 cup flour
  • 1 1/2 cups cornmeal
  • 4 green onions, finely chopped (white and green parts)
  • 1 cup low-fat buttermilk
  • 1 egg, lightly beaten
  • 4 ounces canola oil

Method

  • Heat oil in a small, deep pan, ensuring that the oil is over 1 inch deep. Heat oil to 375 degrees F. If using a deep fryer, add oil as needed.
  • While oil is heating, combine dry ingredients. Mix in chopped green onions. Gradually blend in buttermilk and egg until thoroughly blended.
  • Using a small cookie scoop or tablespoon, drop batter into the oil, making sure not to crowd the pan. If using a deep fryer, shake the basket once all the batter has been dropped in to keep it from sticking.
  • Cook until golden brown. If the oil doesn't completely cover the batter, make sure to turn the batter over to brown on all sides.
  • Remove from oil and allow to drip back into the oil before placing on cooling rack or paper towel.
