Ingredients

  • 2 c. corn meal
  • 1/2 c. pancake mix
  • 1 tsp. baking powder
  • 2 1/2 tsp. sugar
  • 1 tsp. salt
  • 1/2 c. diced onion
  • 1/2 c. diced green pepper
  • 2 jalapeno peppers, seeded and diced
  • 1 egg
  • 1 c. buttermilk
  • 2 Tbsp. vegetable oil
  • 1/8 tsp. hot sauce
  • vegetable oil

Method

  • Combine first 8 ingredients in a medium bowl; stir well. Add egg and next 3 ingredients; mix well. In a skillet, heat vegetable oil on medium-high. Spoon mixture into skillet. Turn when golden brown. When brown on all sides, drain on paper towel.
