- 1 c. finely chopped onion
- 2/3 c. chopped carrots
- 2/3 c. chopped celery
- 1 tsp. minced garlic
- 1 tsp. minced lemon peel
- 6 skinless chicken thighs
- 3/4 c. flour
- 1/2 c. oil
- 1 c. white wine
- 1 1/2 c. chicken stock
- 1 (1 lb.) can tomatoes, cut up with juice
- 1/2 tsp. thyme
- 1/2 tsp. basil
- 2 bay leaves
- 2 sprigs parsley
- salt and pepper
Method
- Combine onions, carrots, celery, garlic and butter in a large Dutch oven.
- Cook over medium heat 8 to 10 minutes.
- Add lemon peel and remove from heat.
