Ingredients
- 4 large (about 2 lb.) potatoes
- 1 small onion
- 1 large egg
- 2 Tbsp. all-purpose flour
- 1 tsp. salt
- 1/4 tsp. black pepper or to taste
- vegetable oil
- sour cream
Method
- Preheat oven to 200°.
- Line baking sheet with paper towels, two layers is best.
- Wash, peel and coarsely grate potatoes and onion.
- Stir in egg, flour, salt and pepper.
- Heat 1/2 inch oil in large skillet over moderately high heat.
- Drop heaping tablespoons of potato mixture into oil.
- Flatten slightly with spatula and fry about 4 minutes, until edges are crispy.
- Turn and cook about 1 minute more.
- Remove to baking sheet and keep warm in oven. Repeat until all mixture is used.
- Dollop on sour cream and pass applesauce.
