Ingredients

  • 4 large (about 2 lb.) potatoes
  • 1 small onion
  • 1 large egg
  • 2 Tbsp. all-purpose flour
  • 1 tsp. salt
  • 1/4 tsp. black pepper or to taste
  • vegetable oil
  • sour cream

Method

  • Preheat oven to 200°.
  • Line baking sheet with paper towels, two layers is best.
  • Wash, peel and coarsely grate potatoes and onion.
  • Stir in egg, flour, salt and pepper.
  • Heat 1/2 inch oil in large skillet over moderately high heat.
  • Drop heaping tablespoons of potato mixture into oil.
  • Flatten slightly with spatula and fry about 4 minutes, until edges are crispy.
  • Turn and cook about 1 minute more.
  • Remove to baking sheet and keep warm in oven. Repeat until all mixture is used.
  • Dollop on sour cream and pass applesauce.
