Ingredients

  • 1 lb. beef flank
  • 2 Tbsp. lard
  • 1 large onion
  • 1 green pepper
  • 2 large carrots
  • 2 parsley roots and greens
  • 2 stalks celery
  • 1 fresh tomato
  • 2 medium potatoes
  • 1/4 tsp. paprika
  • 1 Tbsp. salt
  • 1 1/4 c. water
  • 1 qt. water

Method

  • Cut meat into squares.
  • Wash.
  • Saute onion in lard; add paprika.
  • Stir well.
  • Add meat, salt, diced tomato and 1/4 cup water.
  • Cook slowly 1 hour.
  • Add washed and diced vegetables, except potatoes.
  • Add 1 cup water and cook slowly for 1/2 hour. Add potatoes and continue to cook for 15 minutes.
  • Add 1 quart cold water.
  • Let it come to a boil and cook for 10 minutes.
  • Serve as main dish.
  • Dumplings can be added.
