Ingredients

  • 5 to 6 potatoes
  • 1/2 lb. bacon, cut in pieces
  • 3/4 c. diced onion
  • 2 Tbsp. flour
  • 2 tsp. salt
  • 1/2 tsp. celery seed
  • 3 Tbsp. sugar
  • 1/2 c. vinegar
  • 3/4 c. water
  • 1 Tbsp. chopped parsley

Method

  • Cook potatoes in salted water until just tender.
  • Peel and cut into slices, about 1/4-inch thick.
  • Fry bacon and onion until tender.
  • Combine flour, salt, celery seed and sugar in small bowl; add water and vinegar.
  • Stir slowly into bacon-onion mixture; cook on low heat until mixture boils and is thick and smooth.
  • Add potatoes and parsley; stir gently.
  • Serves 4 to 6.
