Ingredients
- 5 to 6 potatoes
- 1/2 lb. bacon, cut in pieces
- 3/4 c. diced onion
- 2 Tbsp. flour
- 2 tsp. salt
- 1/2 tsp. celery seed
- 3 Tbsp. sugar
- 1/2 c. vinegar
- 3/4 c. water
- 1 Tbsp. chopped parsley
Method
- Cook potatoes in salted water until just tender.
- Peel and cut into slices, about 1/4-inch thick.
- Fry bacon and onion until tender.
- Combine flour, salt, celery seed and sugar in small bowl; add water and vinegar.
- Stir slowly into bacon-onion mixture; cook on low heat until mixture boils and is thick and smooth.
- Add potatoes and parsley; stir gently.
- Serves 4 to 6.
